I’m all for practical meals – specially when I’m eating by myself. Spring calls for green, mixed and colorful salads with the best and most fresh ingredients. Every time I make a trip to Whole Foods I bring with me a box of fresh greens to quickly toss in a bowl with one or two more ingredients. This salad was a surprise mix of those greens, avocado (an old classic here on the blog) and – pause for drums – a turkey burger. I cannot tell you enough how delicious this was and how I enjoyed this spontaneous meal.
– Assorted salad,
– One avocado,
– Turkey burger.
(10-15 minutes)
In a pan, add a little bit of olive oil, let it heat up and place the turkey burger. While it cooks – for about 10 minutes – sort out the salad and put it in a bowl, peal and slice the avocado and pour it into the same bowl. When the burger is ready, let it cool for a bit and slice it in small pieces. Add to the bowl.
– Olive oil,
– Balsamic vinegar,
– Mustard,
– Honey.

Pour a little bit of olive oil, balsamic vinegar, mustard and a hint of honey into a glass. Stir everything until it looks like a paste, pour it into the salad and mix it up! Enjoy and let me know how it goes!
