I’ve been completely obsessed with salads over the past few weeks. Ever since S started making salads when we have lunch together, I haven’t stopped doing them at home. They are so easy, fresh and delicious, it’s hard not to make them. I don’t remember the last time one of my salads did not have avocado or my fridge wasn’t full of them. One of the most important benefits they carry is how they can help lower cholesterol by helping you absorb important nutrients on certain foods. Make sure not to eat them alone because the taste is not so good, but combined with other foods or seasonings are a great way to enjoy them.
– Variety of salad,
– One avocado,
– Two small radishes,
– Half a yellow pepper.
(10 – 15 minutes)
Sort out a portion of lettuces (I normally buy a combination pack), wash the radishes and half of the pepper thoroughly, especially if the radishes are covered in dirt. Open the avocado in half by cutting it middle way. Chop the radishes and the pepper and pour them into the bowl with the lettuces. Peal the avocado and cut it in chunks. Add it to the mixture.
– Olive oil,
– Balsamic vinegar,
– Mustard,
– Honey.

In a small bowl or glass, add a little bit of olive oil, balsamic vinegar (or any other vinegar of your choice), a small touch of mustard and honey. Stir everything with a fork until it looks gooey. Pour it over the salad and stir the ingredients together. I never add salt because the seasoning is enough but be sure to add some, or even pepper, if you feel like it. Enjoy!
