I’m all up for simple and almost ready-to-go-recipes that don’t require a lot of work and stove hovering. It’s great when I just pour the ingredients and they cook without me having to worry. This recipe came to me in a morning when I was craving a good and creamy pasta with some greens – no meat or fish. The final result was this great, enjoyable and tasty pasta with an avocado-cream sauce, made up to use an old avocado standing in my fruit bowl. And it was a good excuse to photograph my new IKEA dish towels, which you can find here.
– Shell shaped pasta,
– One pack of spinach,
– Salt.
(20-25 minutes)
In a pan, add water and salt to cook the pasta. Let it boil and pour the pasta. About 5 minutes before it’s cooked, place the spinach on top of the pasta and cover the pan. Let it steam for about 4 minutes and remove the excess water. Make sure your pan is big enough to accommodate the spinach in the beginning.
– One avocado,
– Two table spoons of light cream.

While the pasta cooks, open up an avocado and place it in a blender along with a pinch of salt and two tablespoons of light cream – or, if you don’t feel like adding cream, you can opt for adding cream or ricotta cheese. Blend it in until is looks creamy. Add a bit of water to make it less creamy and blend it again. Once the pasta and spinach are ready, pour the sauce and let it cook for about 2 minutes. Stir, sirve and treat yourself to a glass of freshly squeezed lemonade. Enjoy!
