Chia Pudding Recipe

About a month ago, I was having brunch with a friend and we were talking about healthy recipes and alternatives to yogurt or cottage cheese. I was telling her how I’ve seen a few recipes of chia pudding and she, excitedly, told me she’s been doing it and how simple it is. I immediately ventured myself to try it and didn’t even had to buy ingredients, already had everything in my pantry. It’s amazing how incredibly simple, tasty and delicious it is!

Ingredients: chia seeds, coconut milk and honey.

Recipe: there are thousands of recipes online but I chose to adapt mine to my taste. In a bowl, add two cups of coconut milk (I normally use the low fat version but you can add whichever milk you prefer), 1/4 cups of chia seeds and two tablespoons of honey. Stir everything for about 3 to 5 minutes, avoid creating lumps, and put in the fridge for minimum 3 hours. I normally do it the previous night to have for breakfast the next day. This usually lasts for about four days and serves five small portions.

Extra tip: you can add your preferred fruit on top or even have it as a healthy dessert.
